Sydney’s leading bars and restaurants come together for Savour Sydney, a one-day food festival at the iconic Opera Bar
Savour Sydney – celebrating Australia’s food, drink and native ingredients
Solotel, one of Australia’s leading hospitality groups, is proud to present Savour Sydney, a one-day celebration of Australian food and drink taking place at Opera Bar on Saturday 3 May 2025, from 12:00pm to 5:00pm.
Curated by celebrated chef Matt Moran, the one-day event brings together some of Sydney and NSW’s most exciting restaurants and bars for an afternoon of eating, drinking and learning. With pop-up food stalls from Aria, Chiswick, Rekōdo and North Bondi Fish, and drink stations courtesy of acclaimed local and regional outfits including PS40, Hey Rosey and The Waratah, the event is also a chance to get a taste of the region’s best restaurants at festival prices.
A centrepiece of Savour Sydney is a partnership with IndigiGrow, a First Nations-owned social enterprise dedicated to preserving, growing and celebrating native Australian plants. Most dishes and drinks at the event will hero native ingredients supplied by IndigiGrow, offering guests a unique opportunity to explore the diversity and depth of Australia’s edible flora. As well as the fantastic food and specialty cocktails on offer, there will be live music all day from local Sydney artists.
The executive chefs from Aria, North Bondi Fish, Chiswick and Rekōdo will be whipping-up festival-only menus highlighting native ingredients and bold flavours. IndigiGrow have co-developed a lot of the menu items based on ingredient seasonality. Get a taste of Thomas Gorringe from Aria’s pine mushroom & smoked cheddar tart, or David Coumont of North Bondi Fish’s snapper crudo with yuzu, taramasalata with salmon roe. Rhys Lamb-Watson of Rekōdo will be bringing their signature Japanese-inspired style with watermelon sashimi, spicy tuna tacos, crispy pork belly baos and a strawberry gum sando, while Samuel Rozsnyoi of Chiswick will be rounding it out, serving a cinnamon myrtle custard tart alongside other savoury dishes. From lemon myrtle to saltbush and finger lime, IndigiGrow’s produce will be infused into a selection of dishes, bringing a deeper connection to Country and culture with every bite and sip. IndigiGrow will also host a pop-up stall onsite, giving guests the chance to learn more about the plants and their significance, and buy some to take home and grow themselves, should they wish.
Matt Moran said, “Savour Sydney is all about shining a light on the incredible food and drink culture we have right here in our own backyard. We’ve brought together some of my favourite venues and bars - from Chiswick and PS40 to Hey Rosey from regional New South Wales - to give people a taste of their menus right by the harbour under the sails of the Opera House.
“Collaborating with IndigiGrow is also something that means a lot to me and it’s a privilege to help share their knowledge, culture and incredible native ingredients with more people. I think everyone who comes down will walk away not just well fed, but inspired by what makes Australian food truly special.”
A highlight of the day will be a 2:00pm talk featuring Matt Moran in conversation with IndigiGrow CEO Peter Cooley, offering insight into the importance of native ingredients in shaping a modern, sustainable Australian dining experience.
Tickets are available for $50 each which includes 4 dishes from a ticketholders-only menu from the stalls, plus a welcome drink - or alternatively, guests can purchase from each vendor’s general festival menu on an individual basis, with dishes starting from $15.
